What is Santa Maria Style BBQ?
Santa Maria style bbq is a method of cooking that originated on the Central Coast of California. The roots of this barbecue tradition date back to the mid-1800s when the town was new and the hills were scattered with cattle. Ranchers would cater Spanish-style feasts every spring for their vaqueros and their families. Large chunks of beef were seasoned with a smoky, sweet dry rub and skewered over earthen pits of red oak, a tree which grows abundant throughout the valley. The meal would be completed with native pinquito beans, salad, and garlic bread. It's still a beloved cooking style in many areas and is continuing to grow in popularity. This is where this Gaucho style grill really got it's start and has become a staple on the Central Coast.
What is a Santa Maria Style Grill?
Today, the traditional Santa Maria grill is a large, open pit with height adjustable cooking grate. Temperatures are controlled by turning a wheel which adjusts grate height over a charcoal grill bed. The grate can travel from the top guide to the bottom of the firebox. A height adjustable grate means never burning your food again. In the beginning when your fire is larger the grate can start out high, and as the embers burn down you can lower the grate towards the charcoal embers or add fuel as needed.
How does airflow work on a Santa Maria Grill?
Air moves freely in an open firebox. There is no need for side vents or fans. You can build your fire directly on the bottom of the firebox. If you are using a bagged charcoal, your environment is very cold or very windy you may consider adding a charcoal grate (lifts the fuel about 3" off the floor) for added airflow, although not required, available in accessories section.
What types of fuels are compatible with a Santa Maria Grill?
Traditionally fueled by red oak wood, but really any hardwoods or fruitwoods burn beautifully as well. Many people use them as charcoal grills. They are very versatile! We even have a gas assist/log lighter option available in accessories section.
Height Adjustable Rotisserie
Grills are now compatible with our cutting-edge height adjustable rotisserie. You have the option to include the rotisserie components. Chunks of steak can be skewered and turned over open flame to get the same flavors which started the beloved Gaucho grill tradition. An 85 lb capacity electric motor turns the spit. As it turns the fats roll around the meat, basting it as it turns. The meats that come off a rotisserie are tender all the way through. We offer a Proformer basket and heavy-duty forks to secure any shape. Fish, whole birds, pork, you name it. The motor slides on and off a bracket on the grate frame, no bolts or tools needed. Components are completely removable for easy storage.
Cooking Grate Styles
Steel Expanded (most similar to cast iron, flat perforated surface), Stainless Free Float Round Rods (each rod spins independently, rust resistant, easy to clean, killer sear marks), Stainless Argentine V Grate (has front drip pan, some use fats to baste while cooking, makes the best skin-on chicken).
