Traditional Argentine grills often have a ‘brasero’ which is a separate area with a wood grate or box that logs are burnt down to embers before being raked underneath a cooking grate. This parrilla can accommodate a brasero on the back (you’ll be able to opt in or out of this feature) or alternatively a fire can be lit directly under the cooking grate. The height adjustable grates make it easy to control temperatures without the need to shovel or rake hot embers should you wish to skip that step. If you prefer to cook over embers versus live flame, simply wait for the fire to settle before adding your food. Either way, this Argentinian grill can be whatever you make it.
A centered front hand wheel adjusts grate height. This model offers a more minimalist visual than a large side crank, and is optimal when your fireplace does not allow for a large side crank.

Split guides allow for the addition of a centered rotisserie spit rod to make the grill double as a roaster. The electric motor is capable of turning an 85 lb balanced load, which is plenty of power to accommodate a whole hog or lamb should you desire! Just keep in mind when planning your space or installing the parrilla in a chimney that the rotisserie motor does protrude past the grill on one side.
